This evening I took all the extra energy I had from being cooped up in my apartment for two months or so and decided to get some big ol’ thoughts and opinions off my chest! It was exhilarating! 

So then I took all the new extra energy I had from and made roquefort-stuffed pork chops. I added some apples and deglazed the pan with beer, but other than that followed the recipe nearly exactly. 

It was fucking delicious, except the pork was a little dry because the sad-ass supermarket I have to work with only has the thinnest pork chops in New York. It was a little like stuffing a piece of paper.

Also, my dinner companion isn’t a fan of roquefort, as I learned ~10 minutes after I started cooking, but I enjoyed it and that is what matters.

Suddenly I feel like I’m back in business. Gonna get a job this week, I can feel it [via ‘unemployed and proud millennials’].
